These scrumptious Pumpkin Streusel Bars make a wonderful treat for teatime or a snack or dessert for the family!

There is nothing quite like a delicious buttery streusel topping on top of a moist pumpkin bar! I have always loved the rich flavor of pumpkin. From the first day of fall through the first of the year I am savoring all of the amazing pumpkin treats the world has to offer. Of course, I make my pumpkin recipes with wholesome and healthy ingredients, so I still feel great after enjoying a delicious treat!
There is some debate in our household whether or not pumpkin should be allowed as a Christmas flavor. I say it absolutely is! I enjoy pumpkin pie just as much on Christmas day as I do on Thanksgiving. Also, the warming spices used in pumpkin pie spice are, pretty much, the same ones used in gingerbread! Anyway, no matter when you serve these Pumpkin Streusel Bars, they are sure to be enjoyed! Trim Healthy Mama S
This is a Trim Healthy Mama S recipe which means it is low glycemic, full of healthy fats, and low in carbohydrates. However, you can read below for my crossover (xo) variation.
In this recipe I use the Trim Healthy Mama Brand Xylitol-Free Gentle Sweet Blend and Baking Blend. I use their products on a daily basis and would highly recommend them. You can find those ingredients here.
Crossover Pumpkin Streusel Bars
These Pumpkin Streusel Bars make a wonderful snack for children! However, if you are serving these to growing children as a snack you will probably want to make these into a “crossover” which means adding a mix of healthy carbs to the recipe. You can do this by simply substituting sprouted whole wheat flour for the Baking Blend in this recipe. You could also substitute coconut sugar for some or all of the Gentle Sweet.
Freezing for an on-the-go snack
If you would like to make these for a simple grab and go snack, wrap each bar in plastic wrap and then store them all in a gallon freezer bag in the freezer. When you are about to leave the house, simply remove one bar from the freezer and place it in your bag. By the time you are ready for your snack, it will be thawed and ready to enjoy!

Should I use homemade or canned pumpkin in Pumpkin Streusel Bars?
I use homemade pumpkin puree in this recipe for a couple of reasons. First, we grow our own pumpkins and always have some that need to be roasted and made into puree. Second, the flavor of homemade pumpkin puree is simply delicious! However, you can use either homemade or canned pumpkin puree in this recipe.

Pumpkin Streusel Bars- THM S
These scrumptious Pumpkin Struesel Bars make a wonderful treat for teatime or a snack or dessert for the family!
Ingredients
- 2 cups THM Baking Blend
- 3 teaspoons cinnamon
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/4 teaspoon nutmeg
- 1/8 teaspoon ground clove
- 4 eggs
- 2/3 cup THM Gentle Sweet
- 1 cup melted coconut oil
- 2 cups fresh pumpkin purée or 1 (15oz) can
- 1 teaspoon pure vanilla extract
- Streusel Topping:
- 1 cup THM Baking Blend
- 1 cup THM Baking Blend
- 1/4 cup THM Gentle Sweet
- 1/4 cup THM Gentle Sweet
- 1/3 cup softened butter
- 1/3 cup softened butter
- 2 teaspoons cinnamon
- 2 teaspoons cinnamon
- 1/2 teaspoon pure vanilla extract
- 1/2 teaspoon pure vanilla extract
Instructions
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
- In a medium bowl, combine the Baking Blend, cinnamon, baking powder, baking soda, salt, nutmeg, and clove. Set aside.
- In a mixer with a beater attachment, combine eggs, Gentle Sweet, coconut oil, pumpkin purée, and vanilla. Turn mixer on medium speed and mix until smooth.
- With the mixer on low, slowly add the dry ingredients to the pumpkin mixture. Mix until combined.
- Spread the mixture into the prepared baking sheet and smooth with a spatula.
- In a medium mixing bowl, combine all of the streusel ingredients and mix with a fork until a crumbly mixture forms.
- Crumble the streusel into the batter and gently pat it in.
- Bake for 20-30 minutes or until a toothpick inserted in the center comes out clean. Allow the bars to cool completely and chill for several hours before slicing and serving.
